Honey and Garlic Roasted Cauliflower with Lemon Tahini Sauce

This honey and garlic roasted cauliflower recipe is a flavourful and satisfying vegetarian dish that you can make with cauliflower, honey, garlic, oil, salt, pepper, tahini, lemon juice, water, and parsley.

The cauliflower is roasted in the oven until tender and caramelised, and drizzled with a creamy and tangy lemon tahini sauce. The sauce is made with tahini, which is a paste made from sesame seeds, lemon juice, water, and parsley.

Ingredients

For the cauliflower:

  • 1 large cauliflower, cut into florets

  • 4 tbsp honey

  • 4 cloves garlic, minced

  • 4 tbsp oil

  • Salt and pepper, to taste

For the sauce:

  • 4 tbsp tahini

  • 4 tbsp lemon juice

  • 4 tbsp water

  • 2 tbsp chopped parsley

  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 200°C/180°C fan/gas mark 6 and line a baking sheet with baking paper.

  2. To make the cauliflower, toss the cauliflower with the honey, garlic, oil, salt, and pepper in a large bowl until well coated. Spread them in a single layer on the prepared baking sheet.

  3. Roast the cauliflower for 25 to 30 minutes, or until tender and browned, turning them halfway through the cooking time.

  4. To make the sauce, whisk together the tahini, lemon juice, water, parsley, salt, and pepper in a small bowl until smooth and creamy. Add more water if the sauce is too thick, or more tahini if the sauce is too thin.

  5. To serve, transfer the cauliflower to a large platter and drizzle the sauce over them. Enjoy your honey and garlic roasted cauliflower! 🐝
